Trout Cakes
2 Trout Fillets diced
2 eggs
1 sleeve Ritz crackers smashed
1/4 cup diced bell pepper
1 diced jalapeno
1/4 cup diced onions
1/2 tsp dried mustard
seasalt to taste
olive oil to cover bottom of medium skillet
lightly beat 2 eggs and mix with other ingredients (except olive oil). Heat olive oil to medium heat in medium skillet. Form 4-5 cakes from mixture, place in oil and allow each side to cook until brown, flipping only once. It does not take long for the fish to cook in these cakes.
Enjoy

If Killer gave you that recipe - don't let him get credit for it!
That's my favorite treatment for fish that comes from the freezer.
For the most part, I avoid freezing mine, but occasionally it happens.
I think we used bread crumbs instead of Ritz. Just choose your favorite crab-cake recipe and substitute the fish for the crab meat! I highly reccomend it!

I'll have to try it with the jalepenos! You've definitely got the edge on me with regard to the culinary skills...
Sorry I missed you guys off the N side of Ono last week. You were working against the full moon, but I still thought you'd have some activity since we were just coming off the neap tide. Maybe we'll get together and fill a stringer some time soon.

Hooo buoy!
Served the family (out of town visitors) this recipe - minus the jalepenos to my dismay, but we substituted green chiles (also substituted green onions instead of onion) - and they tore 'em up. Everybody loved it - even the kids! We served it with a simple blender version of Roumelaude - that really set it off.
Ingredient list for Room-a-lawd-have-mercy
-quantities approximate- we just wing it every time...
1 yellow onion
cup o' Mayonaise
1/2-3/4 cup o' Spicy mustard
handful of cloves of garlic
few tblsp horseradish
a little lemon's worth of juice
toss it all in the blender until you like the texture and dip everything in it!
Big thanks to Killer for being our Bon Secour fishing guide the night before. It's his fault we caught all that fish, but that's another post...
